It would be amazing if I ever could back to posting these on Mondays. I try to, we plan out our weekly meals on Sundays, so I have time, but life happens.
It was a great weekend, full of lots of outdoor time. We went to a children’s day at a local wildlife refuge, we went to a park, played outside and did yard work.
The week is a busy one (isn’t that always the case). Monday, I have a yoga class. Tuesday, J has golf, and O and I are getting haircuts and having dinner with my mom. Wednesday, O has soccer, and J has Lions, and Thursday, O has gymnastics. We will be all together for dinner on Sunday, Thursday, Friday, and Saturday.
Here’s what we are eating this week:
Sunday: Fajita Chicken Pasta (held over from last Friday, because like I said, life happens)
Tuesday: J will eat at the golf course and O and I will have dinner with my mom.
Wednesday: I’m making the Freezer Chicken Taquitos, for real this time!
Thursday: Stuffed Bell Peppers in the slow cooker (I’m loosely basing it on this recipe from Damn Delicious, with a few modifications)
Friday: Creamy Lemon Orzo with Shrimp and Peas from Cooking Light
Saturday: Cashew Chicken Bake from Skinny Fitalicious
