Meal Planning Monday: Week of February 18

Ugh. What a rotten weekend. I ended up going home sick from work Friday and have been sick all weekend. Not exactly what I had planned.

This upcoming week is not a good one for eating family meals. J will be doing set up for a conference on Tuesday, at the conference on Wednesday, then he’s heading to a trade show is Kansas City until Saturday.

Kiddo and I will actually meet up with J in Des Moines on Saturday. We’re go big to take our dinosaur obsessed 4 year old to Jurassic Quest, so that should be lots of fun.

Anyways, that leaves us with family dinners at home only on Sunday and Monday. It is tough for me to find motivation to cook when J is gone. Kiddo is in a pretty picky phase, so more likely than not, I’d be just cooking for myself. So, I see more than a few nights of leftovers/baked potatoes in my future.

Anyways, here’s what we’re eating this week:

Sunday:

Instant Pot Chicken and Dumplings

Monday:

One Pot Cheesy Turkey Taco Chili Mac (this has become my go to anytime I need something that makes a lot of leftovers)

Tuesday:

Leftovers

Wednesday:

Leftovers/Baked Potatoes

Thursday:

Leftovers/Baked Potatoes

Friday:

Leftovers/Baked Potatoes

Saturday:

Dinner out in Des Moines

That’s our week, what are you eating this week?

Looking at the week ahead, I think I need to at least attempt to cook for kiddo and I one of the days while J is gone. Anyone have a kid-friendly, healthy dish to suggest?
